Our mission at Mezcal Pierde Almas is straightforward: to rescue and preserve the cultural heritage and singular history of the amazing elixir that is mezcal. We are first and foremost a socially, culturally and environmentally responsible entity based in San Francisco Tutla, Oaxaca, with our palenque (distillery) in the village of Chichicapam, Oaxaca. At Pierde Almas, we are obsessed with the strictest observance of a constellation of ancestral methods and lore – from pit-roasting our agaves up to a week to using the same design of copper pot still as that brought by the Spaniards – that have slowly evolved over the course of five centuries to produce one of the finest, hand crafted distilled spirits ever to appear upon the world stage. Pierde Almas Puritita Verda

Puritita Verdá is presented at 40% ABV for novice mezcal drinkers and for cocktail use. We start with our handcrafted 100% agave (Agave angustifolia) joven or young Espadín Mezcal and then bring it down to 40% with distilled water. The bouquet is lighter than our full proof Espadín, and slightly smoky with hints of aromatic wood and wild flowers. Its effect on the palate is of medium duration with a velvety texture and smooth, fresh tones of quince and anis in the aftertaste.

Our Espadín Mezcal is Joven or young (with no barrel aging at bottling), handcrafted mezcal made of 100% agave (Agave angustifolia), and is presented at 51% ABV. The bouquet is slightly smoky with hints of aromatic wood and wild flowers. Its effect on the palate is of prolonged duration with a velvety texture and smooth, fresh tones of quince and anise in the aftertaste.
Pierde Almas Dobadaan

Our Dobadaán Mezcal is Joven or unaged and is handcrafted of 100% agave (Agave rhodacantha). This crystalline distillation is presented at 51% ABV. The more elevated alcohol content is due to the high sugar content in the piñas of this exotic species of agave, whose cultivation is very limited and geographically specific. The bouquet is volatile and redolent of autumn fruits. On the palate the effect is fruity and of short duration with emphasis at the roof of the mouth followed by ephemeral tones of clove and scented wood, especially in the aftertaste.

Pierde Almas Tobaziche

Tobaziche, presented at 48% ABV, is perhaps the most exotic of all our mezcals, as the variety remains virtually unknown outside a core group of the most esoteric of mezcal connoisseurs. Production is extremely limited as the wild agaves for this mezcal are harvested from the wilds of the hills near the village of Chichicapam, Oaxaca. The bouquet is charged with strong tones of the flesh of the agave (Agave karwinskii var.) plant, laced with aromatic (cedar-like) woods. On the palate, the effect is sweet, very long-lasting with strong traces of quince and anise. The aftertaste is very floral against a backdrop of clean, wet clay.
Pierde Almas Mezcal +9 Gin

Mezcal Pierde Almas +9 Gin is the first Mezcal-Gin to reach the Canadian or US marketplaces. It was conceived and is distilled by Jonathan Barbieri at his home in San Francisco Tutla in Oaxaca. Barbieri offers this perspective on his new product: “Syncretism, the melding of customs and ideas that occurs when cultures collide – be it by war, migration or commerce – is one of the defining features of the history of distilled spirits. Having worked for years making Mezcal, which itself is the syncretic product of one of the most massive intersections of human movement in history, it seemed natural to segue into another centuries-old distilling practice: gin. Pierde Almas +9, therefore, is the product of a confluence of two great rivers in distilling history. A double-distilled mezcal – already a world-class spirit in and of itself – became the base in which the nine legendary botanicals of gin are macerated for 24 hours and distilled for a third time. The result, Mezcal- Gin, is a “fusionary first”. A true merging of flavors and history. I wanted to move away from the cool, turpentines of London styled gin and give the other ingredients a chance to come forth. This so-called democratization of the botanicals is really achievable using a mezcal base, because unlike a neutral grain alcohol base, mezcal lasts a long time on the palate. So, as a highly volatile vehicle that unfolds slowly across your palate, our 100% Agave Espadín carries the individual flavor protagonists with it and, instead of the juniper standing out as a soloist, we get a complex chorus of spices redolent of the Orient and Mediterranean Europe.” The nine botanicals in +9 are Juniper berries, Coriander, Star Anise, Fennel Seed, Orange Peel, Cassia Bark, Angelica Root, Orris Root, & Nutmeg. Some of the ingredients are macerated with the Mezcal in the copper still pot for 24 hours, while others are hung in a large tea bag in the steam head, where they lend a delicate, floral finish.

Pierde Almas Pechuga

Every November, Pierde Almas produces an extremely limited offering of Mezcal abocado. Strictly adhering to the ancestral recipe conserved by the elders of the village of Chichicapam, we subject a mezcal Espadín or Dobadaán to a third distillation – laden with an assortment of 100% wild fruits, herbs, and nuts – over a very low flame (the process takes eighteen hours and produces only 200 liters). A wild turkey (guajolote) breast is hung inside the bell of the alambique where the steam from the heated mezcal collects before passing into the serpentine condensation tube – thus, the name, Pechuga, or breast. The result is an elixir of bewitching complexity and beauty. The bouquet is laced with the abundant aromas of the wild fruit present in the final distillation. On the palate, these same essences conjure a virtual salad of wild apples, pineapples, tecojote (a small wild plum), almonds, pecans and anise – sprinkled throughout with the perfume of citric blossoms.
Pierde Almas Conejo Mezcal

This is the rarest of all of our mezcals. As with our Mezcal Pechuga, we blend our double distilled Espadin mezcal with the same assortment of wild fruits, herbs and nuts, but instead of suspending a wild turkey (guajolote) breast in the still, this recipe calls for a wild rabbit. Conejo still offers the rich, layered flavors of agave, fruit and herbs, but a subtle, gamey note is present in the background which adds even more complexity to this rare spirit.
